The EVERYTHING Diabetes Cookbook 2nd Addition by Gretchen Scalpi, RD, CDN, CDE includes some of my favorite recipes: chocolate cheesecake mousse, honey and cider glaze for baked chicken and tomato and cucumber salad with mint. Any of these recipes would work for your family and when you have guests.
My father has struggled with diabetes for the past twenty years. I am at risk not only because of family history but also because I struggle with my weight and Metabolic Syndrome.
