There has been a disturbing trend in far too many cookbooks of late; one of emphasizing style over substance, and flair over flavor. This book, thankfully, has it all: wonderful, flavorful recipes that taste every bit as good as they look.
The premise of the book, and the cooking course that preceded it, is very simple. American favorites such as meatloaf, cole slaw, even apple pie, are given a makeover favoring light, fresh ingredients, and emphasize a healthier meal without sacrificing taste.
I can honestly say I would try any recipe from this book. The two dozen or so I have tried were clearly written and simple to follow, and the results were far above average. The coleslaw with fennel seed was outstanding, and when I recently served it was asked for the recipe by every guest in attendance.
Outside of the great tasting food, there are a number of features I found particular useful and informational. Each recipe includes cooking and working times; tips on shortcuts and best season to find the ingredients at their freshest; shopping notes on unusual produce and items; advice on whether the recipe is recommended for early preparation or freezing; and suggestions on assembling a menu.
I also greatly like the page format. Longer recipes always start on the left hand page, and finish on the facing page. NO annoying "flipovers" are necessary!
I would have loved a larger selection of color photographs, which is the only fault I find with this volume. Highly recommended.
