I purchased this text because we were branching into fruit based beverages, nectars, juices, etc. and I needed to increase my overall knowlege of these ingredients. This book is great! I really like how it covers phytonutrients, plant sterols, all the buzz word topics of antioxidants and polyphenols. The processing covered also is helpful in getting an idea of how a puree is different from a juice concentrate, etc. The flow diagrams are also helpful. If you work in the food industry, with any type of fruit ingredient, I would highly recommend this text to build your work library and your own knowlege.
