The Top Shelf Baker: Sweet Treats from a Well Stocked Bar Review

The Top Shelf Baker: Sweet Treats from a Well Stocked Bar

I had a chance to meet Mrs. Rink at the Cleveland Food Show as well as watch one of her demonstrations. I must say she is as fun as her cookie recipies are! Her energy and sense of humor made the presentation a blast to watch. I then purchased her book. I figured that my normal Christmas cookies could use a little "pick me up". (How many Peanut Butter cookies can I make?) I do not bake alot and would not even consider myself a novice, however the simplicity of her recipies was incredible! I have thus far made 4 different recipies from her book. They all have turned out great! I have gotten great feedback (no pun intended) from my bakery treats and people love it when I tell them the drink name each bakery item is modeled after. The cookies do really taste like their drink counterparts...( The drinks are something I do know about!) however you are not going to get arrested for a DUI after a few of these. I am looking forward to making more!! Say goodbye to boring cookies and Hello to fun creative baking with a twist!!!!

The Colors of Dessert Review

The Colors of Dessert
Average Reviews:

(More customer reviews)
I was given this book by my mom. This book is gorgeous. Some of the most intriguing food photos I've ever seen...However, when you leaf through the recipes coming from numerous notable, impressive pastry chefs you quickly realize that this is out of most home cook's league. Many of the desserts have an INCREDIBLY long list of ingredients. And, many of the ingredients are very obscure. Furthermore, the techniques (can you say - blown sugar!) are more difficult and time consuming than most regular at-home cooks can handle. However, there are a few anticipated gems - portions of recipes like an interesting sorbet flavor - which show some promise and are on my list of things to try (however probably wouldn't cause me to buy the book just for that). If you're a wannabe NYC pastry chef, OR someone who wants a great coffee table book, this book is for you. However if you want a dessert book that gives you impressive results with relative ease, this one isn't your best bet.

A photographer named Battman walks into a kitchen with a hat containing six colors… sounds like the beginning of a joke. This ain't no joke. Battman presented a challenge to the world's finest chefs: To create a dessert from one of six colors. Using color as an inspiration, the desserts within this book bring pastry art to a new level and the recipes within brings them into your home. The all-star lineup of chefs include celeberty chef Cat Cora, Emeril Lagasse, chocolate maker Jacques Torres of Jacques Torres Chocolate, Nancy Olson of Gramercy Tavern, Joël Robuchon of L'Atelier, Pichet Ong of P*ong, Sam Mason of Tailor, Patrick Lemble of The Four Seasons, Jessica Isaacs of Nobu and Johnny Iuzzini of Jean-Georges.

Buy this book if you want recipes that use Splenda products. Don't buy it if you want recipes that are low-calorie, low-fat, or even low-sugar (some contain a Splenda product but are also loaded with corn syrup or molasses). The occasional nod is made to calorie reduction where no particular work is required to adjust the recipe, for example replacing the regular milk in a recipe with low-fat milk. But by and large, nothing else has been done to standard baking recipes except to swap some Splenda product or other for sugar.

Lots of information packed into this book! Most recipes are fairly simple, however there are a few that require ingredients not easily accessible to all. A little planning ahead may be necessary. I like the wide variety of recipes and that there are some savory options included. It's also refreshing to see some recipes that don't include refined sugar in the ingredient list (good breakdown at the end of the book "Allergy and Suitability Information"). Overall, a nice addition to my recipe book collection!

Betty Crocker's Cookbook: Everything You Need to Know to Cook Today (Betty Crocker's Cookbook, 9th ed) Review

Betty Crocker's Cookbook: Everything You Need to Know to Cook Today (Betty Crocker's Cookbook, 9th ed)
Average Reviews:

(More customer reviews)
I have always had a Betty Crocker cookbook around. It was the first cookbook I took with me when I moved away from home, and it still remains the first book I grab for if I have *any* questions about a recipe I'm making.
The book is great for cooks of all levels. It has a lot of great introductory information - how do you boil an egg? What are the different cuts of meat? It provides a lot of easy recipes that taste delicious and are nutritious as well.
In addition, the book also eases you into many advanced recipes. Looking to cook a Thanksgiving dinner for the relatives? Trying to make a birthday dinner really special? This cookbook has the recipes for you, all easy to understand and with gorgeous photos.
This version is definitely an improvement on previous versions as well. There is information on grilling and vegetarian meals, something lacking in the last versions. They've also added in a number of ethnic dishes that are quite tasty.
If this book isn't on your kitchen shelf, be sure to buy a copy!

The Flour Pot Christmas Cookie Book: Creating Edible Works of Art for the Holidays

This is a beautiful book with one picture and recipe just about every 2 pages. The photography and cookies are stunning. However, the authors rely heavily on the use of fondant for decorating which I found disappointing. I also purchased the Cookie Craft Christmas and prefer that book which focuses on various piped icing techniques.

The Big Bad Sexy Cookbook: 1,000 Recipes to Become Your Family's Own Celebrity Chef with Comfort Food, Fusion Creations and Fine Gourmet Delicacies
Average Reviews:

(More customer reviews)
`The Big Bad Sexy Cookbook' is not the conventional type you so often stumble upon. It has lofty intentions that go far beyond giving you some hands on tips on preparing a handful of tasty meals. This book wishes to transform your life altogether; to make you 'feel more powerful, confident, attractive and passionate about everything you do in life.'
To drive home this objective the author begins the proceedings with a thought provoking piece of introduction as to why cooking is sexy.
I think the introduction goes a long way in glamorizing the art of cooking, as a means of winning hearts and your celebrity status. The author first destroys certain myths such as `cooking restaurant style food is difficult' (that's because they `rephrase meal selections in French'). Celebrities are famous only for their fans, and their fame is transitory, she comforts us. She also tells us cooking has therapeutic and stress busting qualities. Once you are convinced of these, `you will be fearless...and a celebrity in your own right'. Well, I was,and cooking isn't the same drab chore for me as before.
The recipes that follow (numbering one thousand, they look like never-ending) open up a world of possibilities for you. There are foods for all occasions, for all ages, preferences, fusion, and from conventional to exotic. You have a plethora of drinks (wine, lemon, alcoholic and so on) soups, mixes, dips, shakes, salads, cookies, pies, burgers, grilled food (from Oriental to Wild West). There are vegetable, pork, chicken, beef, seafood, tofu items--everything one looks for in a restaurant is showcased here.
What endeared the recipes to me was the way each item has been presented. Without mincing words, and confusing you, the author has chosen to name a recipe, followed by one or two lines of instructions and then a series of listings, detailing the ingredients appropriate for the flavor. For instance the `Uber Cool, Cold Alcoholic Drinks' carries this simple instruction: `Blend ingredients well. Refrigerate for 1 hour before serving.' This is followed by ingredients for Apple Coffee, Blackberry Coffee Tea, Blueberry Pear and so on. Pretty plain, isn't it.?
To make the cooking experience simpler the book devotes a page on Us to Metric conversion chart, which I found very useful. And the occasional factoids on certain foods come as a whiff of fresh air.
No book that I purchased in years has kept me so engrossed as `The Big, Bad, and Sexy Cookbook' and I'm lovin' every moment of it.

The All-American Dessert Book Review

The All-American Dessert Book
Average Reviews:

(More customer reviews)
`The All-American Dessert Book' by the accomplished baking writer, Nancy Baggett is the fifth `American' dessert book I have reviewed in the last two years, not even counting her own, earlier `All American Cookie Book'. This seems to be an incredibly rich topic, as I see practically no `All American' books on other branches of cookery, except for the great `James Beard's American Cookery'.
The other `American Desserts' books are by Wayne Harley Brachman, Judith Fertig, Karen Barker, and Laura Brody (emphasis on chocolate). The great thing about this subject is that these books are uniformly superior cookbooks, but I will give two big nods to Ms. Baggett over the other books.
First, Ms. Baggett's two `All American' baking books form a larger body of recipes than any of the other four alone. While Nancy's second book does have a chapter on cookies and bars, there is no overlap of recipes with her earlier book, so the two are highly complementary, although the newer book does have a few which border topics in the cookie book, such as a new ginger cookie recipe.
Second, Ms. Baggett makes a point of giving us very detailed recipe instructions. The observation that very few of us got training at our mother's knee anymore is becoming more and more common in cookbooks, so many cookbooks, like Ms. Baggett, are giving us more detailed instructions. While I am very fond of Wayne Harley Brachman's book, especially for his many recipes for basic pastry doughs, I thing I would go to Ms. Baggett for her recipe for certain standards, if the two cover the same preparation.
The first thing I always go to in a baking book is the author's recipe for pie pastry. It is amazing to see the variety of additives one can find in this seemingly simple preparation. While many highly respected bakers will add vinegar or egg to the water in making the pastry, Ms. Baggett adds baking soda. Otherwise, her technique is the same you will see over and over again, with the new suggestion of using supermarket produce bags to sandwich the dough as you work it, due to their strength and food grade material.
Like Brachman's book, Baggett covers desserts which lie outside the world of baking such as puddings; custards; ice creams; sauces and sundaes; and candies and confections. The last subject is strong on fudges, taffies, caramels, and marshmallow.
Like all these books, this one is not by any stretch of the imagination a COMPLETE compendium of American desserts. I suspect that you could take all five books together and find a truly American sweet that is missing. I looked for my two favorite Pennsylvania Dutch sweets here, Apple Dumplings and Shoofly pie and found the former only as a variation to a peach dumpling recipe and found nothing on shoofly pie or molasses cake or anything else familiar to our Amish and Mennonite friends.
I am especially fond of the way Miss Nancy writes her recipes and whenever I need a cookie recipe, I always go to her book first, even before I go to bakery superstar, Nick Malgieri. And, I see the same attention to details in this volume. I am especially happy with her lecture on using the right sized pans and the techniques for assuring ourselves that our pans are comparable to what is called for in the recipe.
Very highly recommended book on American desserts of all kinds.

Ready for Dessert: My Best Recipes Review

Ready for Dessert: My Best Recipes
Average Reviews:

(More customer reviews)
I am a compulsive baker with an embarrassingly large collection of dessert/baking cookbooks. For another book to make it onto the crowded shelves it has to stand out with unique recipes and techniques. While there are many excellent recipes in this collection that I am thrilled to have is there anyone out there who is thinking; if only I had another recipe for Mexican Wedding Cookies?
They are stingy with the photographs and it is very disappointing that of the pictures included none are of some of the more elaborate desserts where you would like to see what the final product looks like. Instead there are pictures of chocolate chip cookies, pots de creme, gingersnaps, flan, bread pudding, sorbet and frozen yogurt. That is just plain annoying. I would gladly pay more for a book that is well photographed.
I have a great deal of respect for David Lebovitz and was excited to be one of the first to get a look at his new title. There are some books I can say unequivocally, buy it you will love it. This one I would recommend looking through it first to see if it is something you would enjoy.
*Update: Obviously my comments on the book struck a chord among the obsessive bakers/ cookbook collectors out there. It has been bothering me though that other than my comment on the amount of recipes included that I dismissed as too common most were really complaints the publisher was responsible for. I want to update this review with a response to a question on the quality of the recipes in the discussion section for those who don't usually check in on those...
All recipes I have tried from this book do work, and they are clearly written. Many of the recipes are adaptations of classics with David's spin. I probably did a disservice to David by focusing on the book from my point of view as an accomplished baker comfortable adapting and tweaking recipes to suit my own taste. I think the real strength and value in this book is the amount of tips and advice David provides. It would be great for anyone who would like a book to teach them about baking and dessert making instead of just providing recipes. David's humorous conversational writing style is a big plus too.

Homemade Christmas: Tried & true recipes, heartwarming memories and easy ideas for savoring the best of Christmas. Review

Homemade Christmas: Tried and true recipes, heartwarming memories and easy ideas for savoring the best of Christmas.
Average Reviews:

(More customer reviews)
Although the book's main focus is as a cookbook with over 175 recipes, it also includes a small Handmade section with gift ideas along with a chapter to aid in Creating Christmas Memories.
For those unfamiliar with the ongoing series, the books are compilations of favorite recipes sent in by readers. The preparation times and skill levels range from easy to advanced, but the majority of the recipes are created by busy people who effectively squeeze holiday cooking, baking and entertaining into a schedule packed with life's other daily obligations. So, if you want to make crescent rolls or caramels from scratch, recipes are in the book, but so are plenty of recipes that include just a few ingredients, that can be whipped up with little notice or difficulty.
I tried the recipe for Festive Cranberry Salsa and it was delicious with corn chips. The Candied Maple Walnuts were a nice twist on the usual sweet nuts with maple syrup, brown sugar, salt, pepper and cinnamon as main ingredients. And, the Easy Salmon Spread was quick and tasty.
The chapters are Creating Christmas Memories, Cozy Morning Brunch, Simmering Soups and More, Warm & Welcoming Suppers, Farmhouse Christmas Dinner, Old-Fashioned Desserts, Cookie Jar Classics, Homemade Sweets to Share, Gathering with Friends and Handmade from the Heart. There are no photographs, but there are charming illustrations. The paper will unfortunately absorb spills, so using a cookbook holder would be a good idea if that is a concern. The spiral binding is ideal for keeping the book open on any page.
This book is a good gift for someone with little time to cook or prepare for the holidays, along with the fans of the series.

Small-Batch Baking Review

Small-Batch Baking
Average Reviews:

(More customer reviews)
Okay, so I love to bake. Unfortunately, there are only two people in my household and both of us have, um, "portion control problems".
Since most of my favorite cookie recipes yield several dozen and making just PART of a cake is nearly impossible, my boyfriend and I often end up eating way more than we actually want. Sometimes I'll try to pass off my baked goods to co-workers, but (and I'm being painfully honest here) I usually polish off the batch myself in less than 3 days.
I know all that sugar is no good for me, but I can't imagine not having cakes and cookies once in a while. Life's too short to cut out something I enjoy so much!
When I came across this book, it was like I stumbled across a puzzle piece I hadn't noticed was missing. The cake recipes make single or double servings! The cookie recipies make less than a dozen! I've tried cutting regular recipes in half, but the results are never quite right. With this book, you're measuring ingredients in tablespoons instead cups, and the two recipes I've tried have turned out beautifully.
The peanut butter cookie recipe made 8 perfect cookies and tonight I tried a recipe for two giant oatmeal cookies. Perfect again. I can't wait to try to make the small cakes, little breads and even a baby Baklava!
I expect that this book will change the way I bake forever. It's nice to make a dessert that I can enjoy without feeling like a jerk for enjoying way too much of it.

The Boozy Baker: 75 Recipes for Spirited Sweets Review

The Boozy Baker: 75 Recipes for Spirited Sweets
Average Reviews:

(More customer reviews)
The Boozy Baker: 75 Recipes for Spirited Sweets features 75 recipes for desserts and another 25 for cocktail recipes with a lot of high-spirited commentary in between.
The author provides a description of baking ingredients followed by an introduction to 43 spirits (from amaretto to wine, alphabetically). Many of the liquor descriptions include the prevalent flavor which would be helpful to anyone not familiar with it. For example, amaretto is flavored with almonds and frangelico with hazelnuts. This could help cooks avoid flavors they don't like (and spending money for liqueurs they won't like).
I found it very helpful that the author provides a brief commentary for each recipe, and offers an alternate flavor or two for many of them. For example, you can substitute dark rum or brandy for the bourbon in the Bourbon Apple Crisp or berry-flavored vodka for the tequila in the Pink Elephant Milkshakes.
Most of the desserts require just a tablespoon or two of alcohol, so you could use a mini-bottle to try the dessert before committing to buying a larger bottle. The main exceptions are recipes using beer or wine which tend to call for a larger quantity (since the flavors aren't usually as intense as liqueurs). For instance, the champagne cake calls for 2/3 cup of Champagne plus an additional three tablespoons for the buttercream frosting.
Recipes in the Have Your Cake and Drink It Too chapter include:
*Fig and Orange Cake with Ouzo Glaze
*Green Tea and Banana Cake with Sake Syrup
*Molten Chocolate Orange Cake
*Plum Biercake
*Coffee Maple Walnut Cake
*Devilish Angel Food Cake
*Individual Raspberry-Almond Cheesecakes

*Jagermeister and Honey Bundt Cake
*Champagne Layer Cake
*Lemon Layer Cake with Campari Frosting
*Southern Comfort Red Velvet Cake

*Hard Cider Apple Pie
*Cherry Pie with Scotch and Walnut Crumble
*Preppy Pink and Green Pie
*Blueberry Rum Pie
*Coconut-Sweet Potato Pie
*Margarita Meringue Pie
*Cranberry, Chocolate, and Pecan Pie
*Irish Cream Pie
*Strawberry-Port Linzertorte
*Nightcap Tart

The index includes the liqueurs and other booze so if you have leftover rum and want to use it in a dessert, you can quickly determine your options (there are 11, including beverages). You can also look up the type of dessert (such as pies or puddings).
The author includes the formulas for metric conversions (ounces to grams, pounds to grams, cups to liters, and Farenheit to Centigrade). She also provides quick reference charts of metric equivalents for volume (from 1/8 teaspoon to 1 gallon), oven temperatures, length (1/4 inch to 15 inches), and weight (1 ounce to 1 pound) as well as for butter (2 teaspoons to ½ pound).
My only suggestion for improvement would have been to include more photos of the finished desserts. Only 28 of the 75 dessert recipes (and 5 of the 25 drink recipes) included photos (which were full page, color and well-styled).
This was a fun read and I am looking forward to baking several of the treats to liven up my next office potluck.
If you like this book, you might want to check out Booze Cakes: Confections Spiked With Spirits, Wine, and Beer which has a similar fun tone and concentrates on cakes infused with liquor.

This book is perfect for people who have either just transitioned to veganism or would like to in that it is chock full of recipes that result in food that doesn't taste radically different from what the average meat-eater is accustomed to. The photos are gorgeous, the writing is great and no matter how much you think you know about baking, I promise you'll learn something.
This is not a "health food" book, although the recipes are cholesterol-free, lactose-free and healthier than the average non-vegan recipes. Instead, it's a book that helps you understand how easy it is to bake without eggs and dairy.
My favorite part of the book is the section on milk, butter and egg substitutes, some of which do indeed make the recipes healthier (e.g., using ground flax seed and water rather than egg replacer, using almond milk rather than soy milk for those of us trying to minimize our intake of soy, or using date sugar rather than white sugar). There are loads of tips and "Food Lore," which are interesting trivia tidbits that provide a historical context for the food. Perhaps most helpful, however, are the "Troubleshooting" pages that list the most common problems and their likely origins. Finally, the Appendices will save you a lot of time because the author has already organized your pantry and utensils for you and tells you exactly what you will need (/need to buy), and she includes a glossary, lists of what to substitute if you don't have the pan that's called for, and most fascinating to me, a section on the difference between baking soda and baking powder (I always wondered about that).
I've made the corn bread, the pancakes, a couple of smoothies, almond milk and the chocolate mousse because I had the ingredients lying around, and I look forward to trying my hand at chocolate chip scones this week. Then off to the serious holiday stuff so I can bring something yummy to every party I attend--so that I have something to eat (and share) at every party I attend.
