I'm really liking this book. I always start my "whole grain cookbooks reviews" with a statement that I live about 5 minutes from the Bob's Red Mill headquarters and their amazing bulk section, so it doesn't come as a surprise that this book is on my bookshelf. I bought it alongside Bob's Red Mill Baking Book but this definitely gets more use.
It has a good combination of vegetarian/vegan and meat recipes. I recently decided to become "at-home" vegetarian (I know it's sort of tongue-in-a-cheek kind of deal but... I'm not buying and cooking with meat at home, but I still eat meat outside the house) and this book has been an awesome help with its inventive recipes. Lately, I've been focusing on the whole grain salads (Basmati Vegetable Salad with Fragrant Vinaigrette is spectacular) and soups (Kasha Purifying Soup is my favorite so far). I've tried multiple other recipes, and each turned out tasty.
I wasn't very succesful with the recipes from the "Sweets" section, though, but I've only tried 2 so far, so I'm not giving up on it just yet.

This is a wonderful collection of vegetarian recipes presented in an easy-to-follow format. I recently lived at Tassajara for several years, and spent much of that time on the kitchen crew. I am delighted that this new edition includes so many recipes that I forgot to copy down when I left! Vegetarian cooking in this country has graduated its early dependency on dairy and carbo-laden meals to an incredible variety of healthy and satisfying dishes. Ed's new edition keeps the best of the original Tassajara recipes and adds some of the latest community favorites to the mix. I have always had a fondness towards baked goods but it wasn't until I received this cookbook as a gift that I began to bake and loved doing it!
Not a single recipe has failed me and I have always received wonderful compliments on everything I've made using this cookbook.
My favorites are the cheesecakes: I never knew so many variations of creamcheese cakes existed!
And the pies! My favorites: French Cranberry-Apple Pie and Lemon Meringue and...and!=*)
This is a book with tried and true recipes and having the standard kitchen in mind.

Typical to a Martha enterprise, this book is well-conceived, thoughtful, and gorgeously produced. It contains a wide variety of meals, arranged according to season. This concept allows the cook to find recipes for foods that are fresh in the market and make the most of what is in peak flavor. The recipes include familiar dishes with new twists and unique dishes that tempt. Unfortunately, the recipes seem not to have been tested adequately, as sometimes the amounts were off or the cooking times were wrong. This seems to be a problem in some of the recipes presented in the Martha Stewart Living magazine. Also, ... not all of these dishes are exactly quick. The criticism about underseasoning in the dishes is valid; final products were at times quite bland. In a cookbook de-emphasizing fats, use of herbs, spices, and seasonings becomes important. For an experienced cook with a critical eye, this may be a source for ideas. ...

I am trying to learn how to cook. This is an American style cookbook, you buy flavored gels and mix with prepackaged mixes.... I wanted to learn how to make my own flavored gelatin deserts. Also there are only recipes for sweet dishes. I was expecting more. Very disappointed.

PASTRY RECIPES FROM MANY FAMOUS PASTRY CHEFS OVER THE YEARS. MS. AMERNICKS BOOK "THE ART OF THE DESSERT" IS BY FAR THE BEST OF THE BEST. THE RECIPES ARE FLAWLESS AND ARE ABSOLUTELY THE BEST I'VE EVER MADE AND TASTED IN ALL MY YEARS OF BAKING. THE RECIPES ARE CONCISE AND EASY TO FOLLOW. THERE IS NO FLIPPING BACK AND FORTH FROM ONE PART OF THE BOOK TO ANOTHER TO FIND SOMETHING THAT WAS MENTIONED BEFORE OR REPEATED. EACH RECIPE IS COMPLETE. MS. I had a chance to meet Mrs. Rink at the Cleveland Food Show as well as watch one of her demonstrations. I must say she is as fun as her cookie recipies are! Her energy and sense of humor made the presentation a blast to watch. I then purchased her book. I figured that my normal Christmas cookies could use a little "pick me up". (How many Peanut Butter cookies can I make?) I do not bake alot and would not even consider myself a novice, however the simplicity of her recipies was incredible! I have thus far made 4 different recipies from her book. They all have turned out great! I have gotten great feedback (no pun intended) from my bakery treats and people love it when I tell them the drink name each bakery item is modeled after. The cookies do really taste like their drink counterparts...( The drinks are something I do know about!) however you are not going to get arrested for a DUI after a few of these. I am looking forward to making more!! Say goodbye to boring cookies and Hello to fun creative baking with a twist!!!!

`The Ultimate Cookbook' by Bruce Weinstein and Mark Scarbrough is a title which figuratively sticks out its chin and invites one to criticize it for overweening pride. I am happy to say that this book lives up to the promise of its title as well as any 692 page book is able to do. For starters, the authors get an initial allowance for having already written ten other `The Ultimate...' this, that, and the other thing cookbooks, all of which (at least those of which I've reviewed) are, I can say, very decent manuals on their respective subjects, even if I did fail to find a good blueberry muffin recipe in their `Ultimate' muffin book. Thus, they are simply enlarging their franchise on this title. They also deserve much credit for pointing out and delivering on their `all new recipes' claim. This means that they have not just `phoned in' this book by reproducing all the material from their other books. So far, this at least makes them eligible for four stars.
But there is more. Much, much more. I have always believed that one can detect a very good or a very bad book within two minutes of opening the covers and browsing about in the Table of Contents and the Introduction. The symptoms of quality showed up almost immediately, when I saw two sections in the `Fish and Shellfish' chapter on `Thin White-Fleshed Fish Fillets' and `Thick White-Fleshed Fish Fillets'. These are obviously guys who have browsed the fish counter and wondered if the flounder and haddock fillets (thin and thick respectively) can be cooked in the same way.
My mind was made up even before I got past the Introduction, where I read the `Thirty-One Examples of Culinary Shorthand'. This is exactly the kind of section I always thought would be a good idea, but have never seen anyone do it really well, until now!
On the one hand, this is a very good general purpose reference cook book, similar to `The Joy of Cooking', Mark Bittman's `How to Cook Everything', and James Beard's `American Cookery'. It has fifteen (15) chapters on all the essential topics. These are:
Breakfast and Brunch
Appetizers, Nibbles, and Snacks
Salads
Soups
Pasta and Noodles
Bread
Chicken, Turkey, and Other Birds
Fish and Shellfish
Beef, Pork, and Other Meats
Vegetables
Grains, Beans, Lentils, and Tofu
Cakes
Cookies
Pies, Tarts, and Fruit Desserts
Puddings, Custards, Mousses, and Souffles
Now the fact that Maida Heatter alone has written about 1200 pages worth of books on cakes demonstrates that there is no way our fair authors can cover every detail of all these subjects. But, they go about each subject which is demonstrably more thoughtful than many, many other cookbook authors. Their ideal audience is one step up from the Rachael Ray 30 minute meal level (note the four chapters on baked goods) where the reader is willing to read through a goodly portion of the book to get the lay of the land before rushing out to the supermarket. On the other hand, the book is not written for the dedicated foodie who follows the advice of high end chefs and does not decide what they will be making until they see what is good at the market that day. To paraphrase the authors, `you don't want to be guessing what you want to make at 6:30 in the evening as you walk down the supermarket aisles.
So, in addition to the very common advice to read a recipe through carefully before beginning, they add the suggestion to read the recipe(s) before and after the one you want, in the event that something similar looks even more interesting.
I was never a big fan of the authors' technique of giving a master recipe and lots of one sentence variations. If I want my blueberry muffin recipe, I want one that someone has tested, not one which is a fourth afterthought to some generic muffin recipe. The authors do NOT take this approach in this book; however they DO many recipes where they give you a template from which you can create dozens of different results from the same recipe. An excellent example is `A road map for The Ultimate Granola'. Granola has lots of ingredients, most of which retain their particular character in the mix, and many of which are on a lot of people's `least favorites' list. Peanuts and milk are two ingredients which many people need to avoid. And, like me, there are some who don't like either coconut or oatmeal. With this approach, you can concoct exactly what you want, and have it come out better than anything from Kellogg's or Post.
For the more traditional recipes, their descriptions of techniques are virtually perfect. My two favorite touchstones of recipe writing quality are scrambled eggs and omelets, and Weinstein and Scarbrough get these perfectly right. There is even a tip on omelet plating here I have never seen after reading at least 20 omelet recipes. The list goes on and on. Every chapter has its sections full of insights you rarely see elsewhere. And, the book is perfectly willing to get into `difficult' subjects such as recipes for fresh pasta, including six different flavored varieties. I was even surprised to discover they include a recipe for Spaetzle, a very specialized German cross between Gnocchi and dumplings.
So, the book is an `Ultimate' in the sense that it covers everything the average `good' home cook may want to know, given the ingredients available in their local supermarket. It will not replace dozens of other cookbooks, because there are thousands of popular dishes such as Basil pesto, tortilla Espanola, or even classic Caesar salad which are not here, but the book appeals to the person who already has books which include these recipes. If you have to own just one cookbook, this should probably be the one to get!

Lots of information packed into this book! Most recipes are fairly simple, however there are a few that require ingredients not easily accessible to all. A little planning ahead may be necessary. I like the wide variety of recipes and that there are some savory options included. It's also refreshing to see some recipes that don't include refined sugar in the ingredient list (good breakdown at the end of the book "Allergy and Suitability Information"). Overall, a nice addition to my recipe book collection!

I wonder: what am I doing writing a review for a cookbook? I rarely write Amazon reviews and the few reviews I have written are related to a completely different genre of book. Plus, I've only recently taken a renewed interest in being in the kitchen - I don't suppose that makes me an "expert" by any stretch of the imagination.
But I wanted to share my opinion of this book with other readers. It's fantastic and the recipes are delicious.
Never before have I enjoyed a cookbook so much. Reading through the table of contents was enough to get my palate fired up. At the time of this writing, I've created over a dozen of the recipes in this book, and each one is a sure winner, not one is a reject. I might have tried more recipes by now, but the temptation to go back to a dish I've already tried is just too great. (We've done the Coconut Tofu with Sweet Chili Dipping sauce four times, now.)
How about a really wonderful Portobello Wellington with Madeira Sauce? Now THAT was a Thanksgiving dinner! Yam and Mushroom Enchiladas with Smoky Tomato Sauce? Spinach, Mushroom, and Gorgonzola in Puff Pastry with Red Pepper Coulis? Despite what I - a carnivore - have always thought, vegetarian cooking can be great. That's a claim I've never been able to make regarding any other vegetarian or vegan cookbook.
The book is extremely well laid out with timing suggestions, "prepare ahead" ideas, and handy tips for getting through the process without any unexpected surprises. Each recipe is preceded by a good description that makes you want to try it immediately. If a recipe has multiple components, each is presented as a logical and timed subsection of the overall plate.
I only wish I knew about this restaurant when I visited Seattle last year. Next time... next time.

I've been gluten free for about 9 years now, and I can't tell you how many recipes and flour combinations I have tried - mostly without success, at least in the bread department. I wasn't sure about buying another gluten free cookbook, but decided to try it out anyway. I wanted to make the pizza first since bread recipes are the hardest (in my humble opinion) to re-create gluten free. The pizza was delicious and has been the first gluten free bread that I have tried that actually emulates its wheat counterparts. Buy the book! I'm sure you won't be disappointed. There is a wide variety of recipes: pizza, doughnuts, risotto, pumpkin dumplings, coffee cake, etc.

Francisco Migoya has done it again, a wonderful book on a variety of pastries, entremets(cakes), savories, and more. It is divided into sections of business such as the pastry shop, bakery, etc. Mainly made for commercial use with servings of 6 cakes to 20 individual portions and special supplies. There are some mistakes in the components of some recipes such as 12 cake layers instead of 2 but if you read through the recipe first you'll be prepared. Overall it is nice but geared toward larger sizes and specialized machines so it might not be suited for the avid home baker but a good book.

This is a great little muffin book packed with over 100 delicious foolproof recipes. About half are for muffins. Although some exotic ingredients are used, most of the recipes are quick & easy to make. Recipes have between 3-6 grams of fat, though most contain 4-5 grams. This may seem a little high, but the muffins are a bit larger than most. Baking papers are filled to top, producing nice round muffins. Recipes include a wide variety of muffins including those with fruit, savory ones, & coffee cake style. Scones, waffles, hotcakes, breakfast breads, syrups & spreads are also included. The book also discusses equipment & ingredients. Many useful hints & tips are included as well. One of my favorite recipes is the Parmesan & fresh herb muffins. I also love the banana drop scones & strawberry topping.

I have always had a Betty Crocker cookbook around. It was the first cookbook I took with me when I moved away from home, and it still remains the first book I grab for if I have *any* questions about a recipe I'm making.
The book is great for cooks of all levels. It has a lot of great introductory information - how do you boil an egg? What are the different cuts of meat? It provides a lot of easy recipes that taste delicious and are nutritious as well.
In addition, the book also eases you into many advanced recipes. Looking to cook a Thanksgiving dinner for the relatives? Trying to make a birthday dinner really special? This cookbook has the recipes for you, all easy to understand and with gorgeous photos.
This version is definitely an improvement on previous versions as well. There is information on grilling and vegetarian meals, something lacking in the last versions. They've also added in a number of ethnic dishes that are quite tasty.
If this book isn't on your kitchen shelf, be sure to buy a copy!

I started a bakery/deli in 1993 using a professional baker and this book as my foundation. In time I also learned to use advice from my customers and from other pros. Still, the whole lot of the experts, save one, gave less useful information than did this classic by Joseph Amendola.
Theories of dough fermentation and the like are of especial importance for any new baker. When something goes wrong, too, this book has a good trouble-shooting section.
I heartily recommend this book to any baker, commercial or men and women trying to please their loved ones.
Other books you should add to the shelf are Professional Baking and Quantity Cooking.

I ordered this book and didn't open it until I had a bridal shower to go to. I remembered it on the shelf and sat down to look it over. What a feast for the eyes and what a bunch of mouth-watering recipes! I have ordered two more, one for myself and one for my daughter's hope chest.
The colored pencil drawings that accompany every single recipe are gorgeous. The author became interested in making her own muffins when a favorite bakery near her work went out of business.
The recipes are divided into categories such as those with fruits added, those with even vegetables and herbs, muffins to fit almost any occasion or food combination.
When my checkbook recuperates from the 3 copies I just bought, I plan to keep one on hand and give it as a gift along with a nice muffin tin, a mixing bowl, rubber spatula, etc.
This book is lovely and I'm looking forward to seeing the author's book on soups. bon appetite!

This book was given to me by my daughter because she has heard me talking about when my husband and I went on a trip to Eureka Springs, Arkansas, and met Crescent Dragonwagon (as a consumer, not personally). Her restaurant did indeed serve wonderful food and the entire trip was a fantastic experience. I must confess, when I found out that this recipe book concentrated solely on cornbread I was skeptical about it holding my interest. I was wrong.
Let's get the negatives out of the way first:
1. There are no pictures of the finished dishes. I REALLY like pictures.
****EDIT 1/3/2010**** In fairness to Ms Dragonwagon I would like to point out that she added pictures of some of the finished recipes here on the Amazon book page. They are really good photos and will give you an idea of how some of the recipes will look after they are prepared. I'm still cooking up a storm from this book and I'm sure you will too if you decide to try it. Enjoy!****
2. With the exception of the cover, the entire book is black, white, and a kind of pumpkin/orangie color. Not very exciting visually.
3. It is my opinion that much too much emphasis was given to the differences between cornbread as made in the South and cornbread as made in the North. Why go to so much trouble? Just put in the recipes and let me decide if I want to try them.
4. After a while (by about page 100) I really wasn't paying very much attention to the huge amount of information regarding cornmeal and history. Too, too much information.
Now for the positives:
1. It is very obvious that this book was a labor of love for this author. She knows her cornmeal from top to bottom. She even states in the book that this project was six years in the making and I can certainly believe it.
2. Each recipe begins with an anecdote concerning where it came from, who gave it to her or how it evolved over the years. These were simply fascinating to read.
3. Each recipe has obviously been tried, used, and tried again by Ms Dragonwagon. Even within the instructions for the recipes she puts in little nuggets of information to help with preparation, cooking or presentation. I appreciated that and it made each recipe seem very warm and personal.
4. These recipes are GOOD! I have tried four so far and absolutely loved each one, my hubby on the other hand only liked two.
DAIRY HOLLOW HOUSE SKILLET SIZZLED CORNBREAD - The first words out of hubby's mouth were, "Does this cornbread have sugar in it?" He didn't like it, I liked it but will not add the sugar next time. We are firmly entrenched in the no-sweetener-in-cornbread camp. On cornbread, now that's a whole other story. I must confess to liking this but I'm more lenient in food basics than my sweet darlin'.
JANE'S TEXAS-via-VERMONT MEXICAN CORNBREAD - I invited two friends over to taste test this with me. (Thanks Bonnie and June for being willing to sacrifice in the name of research!) We LOVED this cornbread and so did hubby when he got home. I paired it with.....
UNCANNILY GOOD SANTA FE STYLE QUICK GREEN CHILE SOUP-STEW - The recipe says it serves 4 to 6 generously. No, make that 10 to 12 generously. It was a fabulous vegetarian bean soup which just took wings and flew when combined with the cornbread mentioned above. For non-vegetarian consumption I would add some shredded chicken or a nice grilled polska kielbasa sausage.
PATSY'S CORNBREAD SALAD - I have this recipe in a pamphlet/recipe book from Lodge Manufacturing (makers of cast iron cookware) and it has always been a favorite of mine (hubby doesn't like this no matter what I do to it!). The difference here is that Patsy developed the recipe over time and hers has a different dressing and believe you me, that dressing makes that salad completely scrumptious! I'll never use bottled dressing again.
I am impressed with this cookbook. Yes it may seem to have a rather narrow focus but it isn't just about cornbread, it is about cornMEAL. That ingredient can be combined with others to make some pretty wonderful dishes. I can imagine myself using this book over and over and over for years to come. If you don't already have a well seasoned cast iron skillet, invest in one. They are relatively inexpensive and come from the factory pre-seasoned now so you get to skip that step. The cast iron skillet makes that indescribably delicious crunchy/crispy crust which makes cornbread a food of the gods. With this book you will have recipes to try out for months, and that's just counting the cornbreads.
