I may be biased because I took Joanne's School of Natural Cookery course ten years ago to date and came to know and love this fascinating woman's approach to ingredients and their interrelationships; nonetheless, I still think this book remains a a powerful and compelling learning tool. Amazing Grains opens with the idea of learning cooking as an open process and flexible framework rather than an exercise in rote memorization. Saltzman does not reject the accepted knowledge of traditional cooking, but works through an analysis of why some cooking 'traditions' taste good and what about their ingredients allow them to combine to make delicious dishes. She returns to the basic elements of taste and instructs the reader through theory and example in how to reconstruct flavor combinations to come about one's own dishes. Even more than this, Saltzman's theories work when applied to traditional cookbooks and can be used to analyze, add to, and improve their recipes. Yes, the examples in the book seem somewhat odd at first, but when you realize that the principles used to come about these unusual recipes actually generate successful dishes, you'll become excited about the possibilities! There is a somewhat macrobiotic/American vegetarian slant to this book, hence the frequent use of seaweeds, miso, mirin (Japanese sweetened cooking rice wine), and umeboshi vinegar; however, the art of the book is all about cross-cultural, cross-palate substitutions and how to utilize them wisely. You can find lists of recipes in any other vegetarian cookbook - what this book gives you is the knowledge and power to be your own list-maker!

Of the many vegetarian recipes books I own, this is the one I return to the most. The recipes are delicious, turn out well consistently and have ingredients that I would normally have on hand. The nutritional information is listed with every recipe, which makes it easy to see at a glance, and the opening chapters are very informative about healthy eating. The recipes include enough spices to give them wonderful flavour without being too hot. A practical and inspiring book.

This is a wonderful collection of vegetarian recipes presented in an easy-to-follow format. I recently lived at Tassajara for several years, and spent much of that time on the kitchen crew. I am delighted that this new edition includes so many recipes that I forgot to copy down when I left! Vegetarian cooking in this country has graduated its early dependency on dairy and carbo-laden meals to an incredible variety of healthy and satisfying dishes. Ed's new edition keeps the best of the original Tassajara recipes and adds some of the latest community favorites to the mix. And the most important flavor of all, that of the Tassajara community, can still be savored in Ed's poems and anecdotes about Zen practice and daily living in the valley monastery which inspired this book and continues to inspire so many people today.

Like to cook? I mean, like discovering new seasonings and playing with interesting ingredients? If so, THIS BOOK IS FOR YOU!
Don't be dismayed that the recipes are all soups and salads. Those are very broad categories! Many "salads" are more like casual meals (such as Bean Puree with Seven Savories, which is pretty much a really cool Middle Eastern-style nachos, using toasted pita wedges instead of tortilla chips, of course). And as for soups... there are SO MANY different recipes here, no matter what your idea of soup may be when you open this book, it'll have expanded ten-fold after you've perused these pages.
The best part is, soup and salad are such forgiving mediums, this book is perfect for the home chef who wants to explore. Helpful text explains unusual ingredients and describes why certain vegetables & seasonings were chosen to enhance flavor and texture in each recipe. At the bottom of every recipe, the Moosewood editors were kind to include a half dozen or so dishes that would compliment it nicely. Makes meal-planning a snap, and so far, they've been right on target, every time.
I got this book for Christmas and many of the recipes have already become "regulars." I have no qualms about trying new dishes, even when serving guests, because you can trust these recipes to need little, if any, tampering. Though I have several Moosewood cookbooks (and I like them all), I can't recommend THIS book enough. Really!
Oh yeah, and I wanted to also mention that Moosewood also includes time estimates & nutritional informaton for every recipe. gotta love that.

As a college sports dietitian, I have been using this book with my vegetarian athletes (and non-athletes) for some time now. I like the way the author uses a conversational tone to cover the scientific and evidence-based information. Most books with this caliber of information are very dry reading. She gives professional-level details to determine an athlete's nutrition needs, but also gives a more general means of calculating calories and foods to supply adequate carbs, protein and fats via the vegetarian pyramid.
My favorite part of the book is Chapter 14, with its many practical suggestions for quick and easy meals and snacks. I think that it, by itself, is worth the price of the book. The suggestions are great for busy vegetarians (which includes all athletes and most other non-athlete vegetarians I know). The nutrition athletes need is translated into foods they can easily get hold of, prepare (if necessary), and actually eat. The author does a great job of giving vegetarians lots of do-able options.

To put this review into perspective for you, it is written by a serious student of cooking that has been actively studying food on their own for 25 years. I have been focusing on Italian food for the last 10 years. My favorite cookbook is "The Professional Chef" by the Culinary Institute of America.
I purchased this book on a whim prior to embarking on a vegetarian lifestyle because I love to cook with alcohol and wanted to add more healthy meals into our family diet. I was very surprised by how much I enjoyed this book from day one.
The author includes a nice wine chart in the front of the book for those of you that aren't familiar with all types of wine. I found it handy since I tend to stick to the Italian wines.
Once I saw the recipe for Limoncello (a family staple in our home) I was hooked. If you have never made this yourself give it a try. The recipe is very simple and the end result is addicting. The recipe for spaghetti with beets is amazing. I never liked beets until I made this dish. It now reappears monthly in my home. Likewise, the chilled prosecco and melon soup is wonderful. It is such a refreshing start to a meal on a hot day. How about a Sangria fruit salad, that is included as well.
My only complaint about this book is that it doesn't have the pretty pictures that I love. If you are vegan this is probably not the book for you. Although I have been about to successfully adapt some of the non-vegan recipes with trial and error. If you have been a vegan and a home cook for long time you can probably do the same thing with ease.

I wonder: what am I doing writing a review for a cookbook? I rarely write Amazon reviews and the few reviews I have written are related to a completely different genre of book. Plus, I've only recently taken a renewed interest in being in the kitchen - I don't suppose that makes me an "expert" by any stretch of the imagination.
But I wanted to share my opinion of this book with other readers. It's fantastic and the recipes are delicious.
Never before have I enjoyed a cookbook so much. Reading through the table of contents was enough to get my palate fired up. At the time of this writing, I've created over a dozen of the recipes in this book, and each one is a sure winner, not one is a reject. I might have tried more recipes by now, but the temptation to go back to a dish I've already tried is just too great. (We've done the Coconut Tofu with Sweet Chili Dipping sauce four times, now.)
How about a really wonderful Portobello Wellington with Madeira Sauce? Now THAT was a Thanksgiving dinner! Yam and Mushroom Enchiladas with Smoky Tomato Sauce? Spinach, Mushroom, and Gorgonzola in Puff Pastry with Red Pepper Coulis? Despite what I - a carnivore - have always thought, vegetarian cooking can be great. That's a claim I've never been able to make regarding any other vegetarian or vegan cookbook.
The book is extremely well laid out with timing suggestions, "prepare ahead" ideas, and handy tips for getting through the process without any unexpected surprises. Each recipe is preceded by a good description that makes you want to try it immediately. If a recipe has multiple components, each is presented as a logical and timed subsection of the overall plate.
I only wish I knew about this restaurant when I visited Seattle last year. Next time... next time.

I spent a brief time working at Cafe Brenda, and I bought the cookbook while working there. I've worked my way through just about every recipe, and 90% of them were wonderful - the recipes are full of flavor, interesting, satisfying, and a great place to begin exploring a variety of international flavors. I particularly love the soup and dessert recipes. The almond cake with chocolate ganache makes a wonderful birthday cake, the maple pot de creme is a wonderful and easy way to end a dinner party with friends, and the variety of soup recipes make use of all the seasons with wonderful results. I do have to say that the fish recipes are generally a bit more creative than the vegetarian entrees, though I've made the vegetarian and vegan croquette recipes (Brenda's signature creations) many times and received enthusiastic feedback from my family and friends. I've given this book as a gift many times with a lot of good feedback. It's also a plus that not many people know about the book, so the recipes aren't dishes that are made over and over again by people who cook primarily vegetarian and have worn out the books by Deborah Madison and Molly Katzen, great though they may be. Hope you enjoy it.

First, Thank You Amazon for your speedy delivery. I had this book in 3 days.
I purchased this book not to become a vegetarian but to learn to cook healthier foods. I must say that after reading and trying the recipes Lyndsay and Ariane did a wonderful job. This book actually informs the reader on the health benefits of a more natural diet using whole grains and more fruits and vegetables. They do not say you have to be a vegetarian they just give you information and guidelines for a healthier lifestyle.
If anyone has tried Vegetarian cookbooks before (as I have), and thrown them out because they were complicated with ingredients you can't find, try this book, I had almost everything in my kitchen already, there are no funky things to go out and find, and my sons (9 and 11) have decided they like soy milk better than regular milk. Best book I have ever purchase. Thanks goes to Lyndsay and Ariane.

This is my favorite vegetarian cookbook. The recipes are incredibly easy, and they are hearty and satisfying enough for a very cold climate. Plus, you can make them in great big quantities if you like, sometimes all in one pot, so that you can spend less time cooking and more time... EATING! And the recipies are definitely worth relishing. This book has the best nut loaf recipe ever. The one drawback is that it's in the 1970s tradition of vegetarian cooking,which includes alot of dairy and eggs. Some of the recipes are vegan, and those are very tasty and hearty and warming, but in general this is probably not the best book for vegans. I'm noticing that I'm seeing it less & less in bookstores, and I hope they don't quit printing it, because it's great!

I've recently become a vegetarian (within the last 2 months) and I cannot rave about this book enough! I've bought about 6-7 vegetarian cookbooks recently and this one takes the cake. It is definitely worth the investment. . . . and your carnivorous friends will like the recipes as well! Bobbie Hinman includes so many different types of recipes that you'll never get bored. The directions are very thorough and it's even notated on each recipe which type of vegetarian diet it falls under (i.e. V for vegan (no dairy), O for octo, etc.)
If you buy any vegetarian cookbook, let it be this one. It's great for a beginner like myself and the recipes are fantastic. . . . they really help bridge the gap for a new veggie.

`World Vegetarian' by leading authority on Indian cooking, Madhur Jaffrey is one of those books you can tell after reading a page or two that it is worth your time and money if you are interested in learning new things about food.
It is important to note that the notion of `vegetarian' in the title does not mean that the book is all about vegetables, just as a vegetarian is not a person who eats only vegetables. A vegan or vegetarian is someone who avoids meat and, to some extent, products derived from animals. Some people whose vegetarianism is based on respect for animal life go so far as to avoid vegetables like root vegetables whose harvest may entail the death of insects or worms or other subterranean living animals. Ms. Jaffrey is a partial vegetarian, based more on Indian culture and tradition than anything else. And, her book includes major chapters on dairy products derived from milk and eggs.
This is a very big book, with very long chapters on all the big vegetarian topics. These are:
Dried Beans, Dried Peas, Lentils, and Nuts -122 pages
Vegetables - 200 pages
Grains - 186 pages
Dairy - 64 pages
Soups, Salads, and Drinks - 82 pages
Sauces and Added Flavorings - 54 pages
plus
Equipment, Glossary, and Resources - 32 pages
Even with 200 pages and 200 recipes, this very large section does not match the depth of books dedicated entirely to vegetables such as Jack Bishop's `Vegetables Every Day' or Elizabeth Schneider's encyclopedic `Vegetables from Amaranth to Zucchini'. In fact, Ms. Jaffrey has just 31 sections dedicated to different vegetables, while Ms. Schneider covers over 130 different named vegetables, but Ms. Jaffrey gives us some insights on vegetable cookery which I believe cannot be found elsewhere. It may not be that other books don't cover the same thing, but Ms. Jaffrey seems to have a way of putting things which makes them stick in your memory a lot more firmly than other writers' coverage does. For example, in dealing with the baking of red beet roots, Ms. Jaffrey says that baking white potatoes in tin foil leads to thoroughly unpleasant soggy skins and dry flesh, but the same technique is exactly what you want to do with beets, as the skin of beets in inedible.
Another way in which her facts are presented in an effective manner is when the section on greens discusses fourteen (14) different varieties of greens together so that similarities and differences between methods appropriate to each variety can be discussed.
Ms. Jaffrey is certainly true to her book title in that her recipes come from all over the world. She gives us the service of stating beside each recipe name the country or cuisine from which the recipe grew. While this may only be important to nitpickers like myself, she is careful to point out when recipes are from a purely Italian or Chinese source or from a hybrid recipe developed by Italians or Chinese who are transplanted to the United States.
The chapter on `Grains' is dedicated as much or more to dishes made with flour grains and meals, as in noodles and porridges as to the grains themselves, as in rice dishes. One of the clearest signs of Ms. Jaffrey's background is the fact that very little space is dedicated to yeast breads. Only five (5) recipes contain yeast and two of those are for pancakes. All other bread recipes are for flatbreads or breads with a chemical leavener. These recipes are welcome, as few appear in conventional books on bread, and I do not miss a fuller discussion of breads, as there are easily a dozen excellent books on bread which come to mind.
The other side of the coin is in the dairy chapter that includes recipes for homemade cheeses which I simply have not seen anywhere outside of Diane Kennedy's most recent book on the Mexican pantry. Among these recipes are homemade Indian cheese, unflavored and flavored with pepper or herbs; Latin American cheese (`Queso Blanco'), Italian mascarpone cheese and Syrian Cheese. And, just to be sure none of this effort is wasted, there are several recipes giving us things to do with our homemade Indian cheese. This chapter also contains a wealth of egg recipes that you will simply not see anywhere outside of a book dedicated to egg recipes or a large book on Indian cuisine. With a rather long headnoted homage to Julia Child, Ms. Jaffrey gives us an excellent recipe for the classic French omelet. You will succeed with this recipe, but mastering the technique may require a consult with Ms. Child's book or Jacques Pepin's book on technique.
All this means is that Ms. Jaffrey's decisions on what to include in this book and what to leave out is impeccable.
It may seem presumptions on my part to evaluate Ms. Jaffrey's recipes, but I did check out her vegetable stock recipe and found it agreed with all my experts' opinions on how and for how long to cook a vegetable stock. The only deviation from classic doctrine is that she includes a diced potato, but not until the broth has been brought to a boil and reduced to a simmer, so, I suspect the spud has no chance to make the stock cloudy.
In a sense, this book fulfills the promise of Jeanne Lemlin's `Vegetarian Classics' without padding it with cliched recipes for macaroni and cheese and pasta Puttanesca. Very, very few recipes in this book are familiar to me, in spite of the fact that I have walked my way through close to 400 cookbooks in the last 18 months.
This book is highly recommended for your armchair library when you are out of the kitchen, searching for new ideas and dishes.

so what the heck am I doing with a vegetarian cookbook?!?? Well, I was given the book and some suggestions -- Sopa de Lima (from the Mexico section) and Saffron Butterflies. But it's a veggie cookbook, so it just sat on my shelf -- until I had dinner with the person who gave it to me. It wasn't until AFTER dinner, she told me it was recipes from this book -- the meal was so good, I didn't even notice it was meatless.
So, I tried them, and now I'm HOOKED! Sopa de Lima is great food for during halftime of basketball and football games -- and I later found out I can make it fast and easy with some simple substitutions (hint: use a jar of salsa instead of a bunch of other ingredients). Saffron Butterflies is SMOOOOOOOTH and good -- with or without some meatballs thrown in. These two were so good I've had to try others and now "Rumpledethumps" (silly name, but GREAT DISH) is a personal favorite -- I just use it as a side dish along with a London Broil. Okay, so I'm a carnivore -- these recipes are great standing alone, and most of them work well with meat added or on the side.
More than just the great recipes, this book is great for the stories, too. I never would have thought cookbooks make good reading, even when I'm not cooking, but this one is.

I love a cookbook that is more than just a collection of recipes. The recipes in this cookbook all start with some background about where the recipe came from, how it can be used, and other ideas for how to serve it. This makes the book fun to browse through. Also, the book is well-organized and well indexed. There's even an ingredients index so you can look in your pantry and pick a dessert based on what you have on hand. The variety of recipes is good: some are easy, some are more complicated, some are good for kids, some are fancy for adults. I've tried several things from each chapter of the book and everything has turned out well. Basics are included, such as a flawless pie crust recipe, as well as more unusual desserts such as Pink Chiffon Cake. Another bonus is the multicultural aspect of the book. There are several recipes from the Middle East, and some from Italy, Greece, too. These Mediterranean desserts tend to be less sweet than what our US taste buds usually like, and I've found them great for informal suppers and luncheons. (By the way, the name "Moosewood" in this cookbook does not mean "healthy"! There's plenty of sugar and other good stuff in these recipes!) I make desserts only when entertaining, so I usually have to take the risk of trying new recipes with guests, but with this cookbook I never have any worry about whether it will be a hit or not. This book has proven itself to be a Dessert Bible for me!

One of the first vegan cookbooks I purchased several years ago, and have turned to frequently over the years, is Very Vegetarian (currently available new and used from Amazon), also by Jannequin Bennett - executive chef of TJ's restaurant in Richmond Virginia's 5-star Jefferson Motel. It is an attractive, well-written collection of over 300 plant-based recipes that I have enjoyed perusing as well as using. For those new to vegan cooking, Ms. Bennett's book contains helpful supplemental material introducing what may be unfamiliar ingredients, the recipes are extraordinarily well-written, and 16 color-plates throughout the book help one picture just how enticingly vegan food can be presented. Most importantly, recipes I have tried have been delicious and well received by my family! Naturally, I was excited to see that Ms. Bennett had a "new" collection out this year. What a disappointment to discover that THE COMPLETE VEGAN KITCHEN IS A RETITLED, PAPERBACK EDITION OF HER PREVIOUS BOOK. If I didn't already own the hardback edition, this would have been an exciting new addition to my now extensive collection of vegan cookbooks. It has the same interesting foreword by Olympic Athlete of the Century, Carl Lewis, all the same wonderful recipes, and is illustrated with the same beautiful photos - just presented in a colorful paperpack cover this time around. If you don't already own Very Vegetarian, I highly recommend The Complete Vegan Kitchen.Very Vegetarian
