As always, you can count on Karen Adler and Judith Fertig (aka the Barbecue Queens) to remind you not to take cooking so seriously. You can have fun at the grill, and enjoy guests at the same time. The recipes in this latest romp through the back yard will allow you to do both. Some are fresh, some are tried and true, but all are well written, easy to follow and won't have you scanning weird markets to find obscure ingredients for esoteric dishes. In other words, you can find what you need at your neighborhood Kroger or Safeway to serve up dishes from this book, touted as "The Be-All End-All Party Guide, from Barefoot to Black Tie". My only exception to this cookbook is the ladies' advice regarding storing Frozen Margaritas, Frozen Cosmos, and The BBQ Queens' Royal Slush in the freezer. The instructions tell you to thaw them until slushy before serving. Unless Karen and Judith have a sub-sub-zero freezer, these drinks, given their alcohol content, should be pretty much slushy when you take them out. Alcohol simply does not freeze in the home refrigerator freezer. With that said, don't miss this cookbook, it will set your mind for barbecuing all summer long!

I bought this cookbook to help my husband learn how to use of the features on his new grill, eg the rotisserie and the infrared searing burner. There was some information on these, so I was happy. However, many of the recipes are unnecessarily vague regarding cooking times, as many new grills have thermometers, and surface thermometers are also available. It is one of the better grill cookbooks out there, however, so even with its faults, I would recommend it.

Elizabeth Karmel did it again! I loved her first book on grilling but this one is a slam dunk! It gives you all the basics of grilling and then every way you could possibly marinade, brine, sauce and spice up your grilled food. I couldn't wait to try the Pernod Brine for Salmon, what a cool idea. It was amazing! There are about 20 brines, you can even make your own pastrami brine! The butters are awesome too. For all courses, sweet and savory, on the grill, this is the only book you need (and its not big and cumbersome). I'M FIRED UP!

I purchased this along with Southern Living 40 Years of Our Best Recipes the week before Labor Day and it was delivered within a couple days. This was my first BBQ cookbook and will probably be my only one as I am still reading and finding awesome recipes I want to try. My contribution to our Labor Day cookout was four recipes from this cookbook: Tropical Smoothies, Four-Hour Barbecue, Grilled Asparagus and Honey Barbecue Sauce (which I used on babyback ribs and chicken quarters). ALL of them were a HUGE hit and the cookbook was passed around during the cookout. I have purchased two additional sets as birthday gifts and the recipients have raved about the new recipes they are anxious to try, especially from this BBQ cookbook. I also shared this BBQ cookbook with some of my co-workers and they all want their own copy (I'm not letting this one out of my sight for very long). The recipes are not complicated and so far, have provided wonderful results.
There are other helpful tidbits in the front of the cookbook that were interesting to me: There is a fairly decent list of BBQ places and BBQ events to visit across the country so now I can build my travel plans around those places/events. Reading the grilling tips in the front has even inspired me to purchase a smoker. Although it is a paperback version and may not be able to withstand my constant reading and use, I am very excited about this cookbook and will definitely be using these recipes year-round.

While grill chefs will be very happy with this book, it has a broad appeal for all cooks. Take poultry. Poultry is actually more difficult to cook well then most beginning cooks realize. It is easy to overcook and dry out chicken, undercook and deliver unplesantly bloody chicken or just end up with bland results. This book provides the key to solve those problems through .....marinades, rubs, brines, cures and glazes. All of these methods can be used prior to or in conjunction with standard indoor cooking techniques. Try a brine before preparing your next pork chop in any manner
What I particularly appreciate it that the author takes the time to explain the reason the techniques work. He clarifies what can and cannot be expected from each technique clearing up much confusion on these top ics.The presentation of this material is easy to understand and informative. People who enjoy Alton Brown will enjoy this aspect of the book. If you like, however, you can skip this material and go directly to the recipes. The recipe section is full of spice and herb combinations that are novel and imaginative, and that is coming from someoe who owns nearly 100 cookbooks.
Darn good buy.

Just so were on the same page, this book is on smoking, as opposed to be purely another book on BBQ. Smoking is a technique that takes time and patience and don't expect to get things perfect the first several tries. McPeake opens the book by discussing different types of smokers. McPeake says bigger is not better. I would also add that more expensive is not necessarily better either as you can achieve great results with an inexpensive water smoker. No smoker? No problem. McPeake also explains how you can use your kettle grill...even your gas grill for smoking and still make great smoked BBQ. It does work well with a gas grill once you get your technique down. McPeake provides a list of different wood types and the tastes they will provide. I love apple wood with chicken, it gives it a great flavor. In additon to the techniques which I consider the most valuable section, there's chapters on meat selection, temperatures, rubs, etc. Fully 1/2 the book is technique oriented before te 2nd half gets into some recipes. Very good, funamental and advanced smoking book.

I buy far too many cook books. I have everything from the Cooks Illustrated line-up to some Food Network/ PBS shows, etc.
This has to be the best instructional cook book I have read.
This book is not a sum total of recipes, nor is it a compilation of how the technique was developed... It is a lesson plan. It is very much a course in how to barbecue and after you have learned each lesson you will truly know how to read what is going on with your fire and food.
You won't have to go search a website to find out the amount of time you should leave ribs on and at what temperature. You won't have to purchase some digital thermometer or fancy temp control. No more guessing, speculating, or making things much more difficult than they need to be.
After all, should barbecue be that difficult? This is the book that will teach you how, it will give you the skills. You can use this with a weber smokey mountain, an offset, or... a kettle grill!
Now, there are also some great recipes in the book to boot! You'll learn some flavorful marinades and you'll learn the basics of a marinade so that you can whip one up from scratch! The same with brines and with rubs! Being able to create these things successfully from scratch is what separates the ok bbq'er from the great and confident one.
There is also a whole section on what to do with leftovers. I had some smoked chicken left over and used one of the recipes... now I smoke the chicken just to make left overs. By the way, it is the best chicken I've bbq'ed. And it is so fast and easy now that I've done it a couple times.
I can't say enough good things about this book! It is a steal for the price, GET IT!
On a side note, it is really damn fun to work your way through the lessons as well :)

Although this book sounds a little gimicky, it is still packed with many quality recipes. If anyone has used Raichlen's previous books, you know the recipes produce outstanding results - and this book is no different. I've tried about 12 recipes so far and they've all been outstanding. The Coca-Cola can chicken is every bit as good as the title recipe. (In other words, restaurant quality, or better)
The majority of the book is beer can chicken and its derivatives. And there are quite a few variations on the theme, almost enough to make you forget that this is mostly a book about poultry on a can full of some sort of liquid. Don't get me wrong, the resulting dishes are varied and spectacular, running the gamut from true American barbecue to Asian, to Indian, to Middle East, etc. - similar to his Barbecue Bible. However, you'd better like poultry if you buy this book. There are some meat, fish, and vegetable dishes (and dessert), but it's mostly poultry on a can.
One plus that the author mentions, and most people will figure out, is that even though it is mostly poultry on a can recipes you don't need to stop there. There are so many rubs, sauces, and marinade recipes in there, you can really be creative and do whatever you like with them. Throw in some good tips here and there and you've got a great book.
Call it 4-4.5 stars, simply because the author's previous barbecue books are true 5 star books that are hard to live up to.

The first time I tasted grilled food, many years before Weber existed, I remember wondering why all meat was not cooked over charcoal. As I got older, I started grilling a bit but the recipes were the staples: burgers, steaks and chicken.

Then I purchased a Weber charcoal kettle, which came with some neat, out of the ordinary recipes. I started experimenting, and branched out into growing fresh herbs to season the food. There are now four Weber grills on my deck, including the little "Smokey Joe", for little projects and The Summit gas grille for the big ones.

As a result of a couple of major cooking projects I did for the neighborhood, I was given this book. I didn't know whether it was a thank you, or a subtle way of saying that my cooking needed improvement. What a horizon expanding book it is! If there is anything outside its covers that is needed to teach the novice or improve the good cook, I don't know what it is.

Recipes? Yep, and not a single loser out of 350. Grilling advice? Yep, everything from buying to using to maintaining your grill. There's a section on the uses of fresh herbs, including reduction formulas for the use of store bought seasoning. There are explanations as to why fresh ground black pepper and Kosher salt are preferred.

I have used this book exhaustively since I got it, and have given it as gifts to many, many friends, all of whom are as enthusiastic about it as I am. Simply put, if grilling means burning meat to you, save your money. But if you enjoy the looks of friends and family when you place a truly outstanding meal on the table, get this book.

Cooking seems to intimidate some guys. I don't know why. But Weber's book takes the fear out of cooking, and after a couple of successes, generates a bit of enthusiasm for the next time, both for the cook and the eaters.
