I've recently become a vegetarian (within the last 2 months) and I cannot rave about this book enough! I've bought about 6-7 vegetarian cookbooks recently and this one takes the cake. It is definitely worth the investment. . . . and your carnivorous friends will like the recipes as well! Bobbie Hinman includes so many different types of recipes that you'll never get bored. The directions are very thorough and it's even notated on each recipe which type of vegetarian diet it falls under (i.e. V for vegan (no dairy), O for octo, etc.)
If you buy any vegetarian cookbook, let it be this one. It's great for a beginner like myself and the recipes are fantastic. . . . they really help bridge the gap for a new veggie.

As an adult I have been delivered from the Midwestern home of my childhood (meat and potatoes, cream of mushroom soup casseroles, ice cream every night before bed) to the beautiful land of Oregon where outdoor markets and co-op shopping are plentiful. Over the past ten years I have been exploring vegetarian options and a healthier lifestyle but it can be difficult to get beyond some of the complex recipes, expensive ingredients or bizarre taste combinations that seem to frequent vegetarian cookbooks and co-op shelves.
This wonderful book is geared to suit children, who can be notoriously picky eaters, but it also works well on an adult level. It is a great introduction to quick, simple vegetarian meals that introduce a few basic items without overwhelming the taste buds or the wallet. For both adults and children it is possible to move into a healthier lifestyle gradually, one recipe at a time, one meal per week...when we can sit down as a family and each find something new that we like on our plates then I think we become much more open to making healthy choices habitual.
The book also includes some great recipes for slumber parties, Halloween parties and many ideas for re-vamping typical kid foods (hot dogs, macaroni and cheese, brownies) into healthier options....

My mother in-law bought me this book shortly after I married her son. I think she was a little worried that he wouldn't eat well because he married a vegetarian. Our first year of marriage I used only this cookbook and a few recipes my mom had given me. I can't tell you how exciting it was to sit down, read through a section of the book, write a grocery list for the items I would need, write out a dinner menu for the whole week and then call my friends to tell them what I was fixing on each night and ask them what sounded good to them so they could join us for dinner. I did this for several months until my evenings were filled with other activities. (Eating was definitely an activity when it came to using this book.) I have enjoyed every recipe I have used from this book. And they're so easy!! Here are a few of my recommendations (I don't have page numbers in front of me): The Barbecue Red Beans, Corn and Rice; Manicotti; Fajitas; Falafel; Hummus; Black Bean Hummus; and so many more. My only problem with some of the recipes is that I'm not a big salt eater and so I changed a few of the measurements on some recipes. And also, because she uses a lot of cheese (which is my favorite food) I gained a lot of weight that year. I do love the fact that she doesn't suggest using lowfat or non-fat foods to make the recipes but use caution. This is a "must have" cookbook if you love eating really good food!!
